2013 The Bead Method Traditionelle

Vintage

The Chardonnay and Pinot Noir grapes that were used to make this wine were carefully selected from a Pemberton vineyard in 2013.

Winemaking

After crushing and fermenting, the 2 varieties were blended 50/50 before the wine received a secondary ferment under crown seal in bottle. The wine has been carefully aged on lees for four years to enable autolysis of the yeast to impart complexity on the wine. Earlier this year, the wine was disgorged, carefully dosaged and sealed under cork.

Tasting Notes

Aromas of ripe stone fruit, nougat and brioche are expressed on the nose while the palate displays a blend of peach, melon and apricot that merges with savory mushroom and stock characters.

2018 Sea Urchin Sauvignon Blanc Semillon

vintage

A long winter and cool summer allowed gentle ripening of white grape varieties in 2017. This produced excellent conditions for the slow ripening of perfectly balanced  Sauvignon Blanc and Semillon. The fruit showed an ideal sugar to tartaric and malic acid ratio which expressed a fuller spectrum of fruit flavours.

winemaking

Sauvignon Blanc and Semillon was harvested and pressed in the cool of night to retain freshness and to keep each parcel sound for settling and fermentation. Inoculation was performed in stainless steel tank by a selected yeast strain while keeping each variety separate until blending. Post fermentation each tank was left for up to one month on yeast lees to add complexity and weight to the palate.

tasting comments

A bright crisp and delicately textured wine. Pale straw with a green tint. Classic Sauvignon Blanc flavours of passion-fruit, lychee and guava meld seamlessly with Semillon characters of fresh straw and lemon. The resultant wine is in the true classic Margaret River style -crisp, mouth-watering and refreshing.

2017 Sea Urchin Chardonnay

The fruit was machine harvested at night and pressed in the cool early morning to retain freshness and varietal character. Cool fermentation occurred in stainless steel tanks.

Aromas of white peach and fresh lime precede a palate of ripe stone fruits. This wine has a succulent mouth-feel of bright, fresh flavours with grapefruit and lemon zest creating a well balanced finish.

2018 Sea Urchin Rose

vintage

2018 was an exceptional vintage for many Margaret River vignerons. Soaking rains in December produced strong canopy growth. Excellent flowering and fruit set followed ensuring good yields. Finally, the cool summer weather enabled steady ripening and allowed fruit from the Wise Estate shiraz vineyard (‘Mazza’s Block’) varieties to ripen with a balance of sugars and natural acids that suited perfectly the vinting of a Rose style wine.

winemaking

Using the traditional saignee method to achieve a delicate colour, this estate grown Shiraz from 30 year old vines was picked at 13 beaume, crushed into the press, where the juice spent 18 hours on skins and then the free run juice sent to stainless for ferment.

tasting comments

A perfect summer’s day drink with eye-catching intense pink colour, aromas of bright red berries and a complex palate of strawberries and cream. A perfectly balanced wine, with a refreshing, clean finish.

Great picnic or barbeque wine with grilled chicken, Also matches well to light, spicey Asian cuisine. For something a little different, try the Rose with a dessert of ripe peaches.

In 2017 we experienced a near perfect growing season with little unseasonable rainfall, good ripening conditions and therefore well balanced fruit.

Winemaking

A short cold maceration to extract the abundant fruit and spice preceded fermentation, malolactic conversion and maturation in French oak.

Tasting Notes

A deep purple with hues of red with an array of mulberries and spice on the nose. The palate is soft and mouth filling with texture, flavour and natural acidity in perfect balance.

The pure, fruity quality of this wine, balanced by its savoury finish makes it the perfect match for poultry and meat dishes cooked in a sauce, rich tomato based dishes, especially pasta, grilled red meats and excellent too with pizza.

2016 Sea Urchin Cabernet Merlot

Vintage The South west of WA had an abundance of rainfall over the winter period of 2015 which was followed by minimal rain from November until mid March. Fruit and wine quality from the 2016 vintage has been rated as exceptional although yields were low. Winemaking These varieties were picked, fermented in stainless steel vats and left on skins to build tannin structure and complexity. After gentle pressing each parcel was matured with oak separately until final blending. Tasting Notes Grape bubble gum aromas with a hint of dried herb. This full bodied wine has a strong balanced structure of fruit, acid and tannin. A perfect wine to drink now with a juicy steak or age to develop it into a smooth velvety mouthfull of flavour. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. This can be quite beneficial as cool ripening conditions helps maintain the fresh, bright aromas of these white varieties and reduced alcohol levels.

Select parcels of Great Southern Riesling have been fermented cool and slow in stainless steel to retain the purity of the aromatics.

2017 Leaf Series Verdejo

Verdejo is a rarely seen Spanish variety in WA. Aromas of fresh citrus and light floral notes. The palate shows a fleshy softness with abundant fruit flavours and a light refreshing finish.

The next stage involved gentle pressing to a stainless steel tank for cold settling of solids. The clear juice then racked to another tank for fermentation. Fermentation was maintained at temperatures sub 15 degrees C.

2017 Leaf Series Fiano

The Fiano variety was introduced to Australia from the Campania region of Italy where it has been grown since the days of the Romans. It thrives in warmer climates such as northern end of the Margaret River region. It is mid weighted variety similar to semillon.

winemaking

The fruit for this wine was sourced from a vineyard near Cowaramup in the heart of Margaret River. The Fiano grapes were machine harvested in the cool of night to retain freshness and to avoid oxidation. The grapes were placed through the destemmer to remove unwanted stalks before being chilled down to the bag press. Gentle pressing followed to stainless steel tank for cold settling of solids. The clear juice then racked to another tank for fermentation. A small portion of juice was also placed in old french oak barriques for fermentation. Wild yeasts were used for the fermentation at temperatures sub 15 degrees C.

tasting comments

Pleasant aromas of lemon curd and white peach. Zest and stone-fruit dance on the palate, carried by a waxy texture and finishing with a fresh acidity.

Winemaking

Two parcels of fruit, one Dijon & the other Gingin clone, were harvested early morning over a two week period to achieve uniform ripening & maximum flavour accumulation. Fermented in new & 1 year old French oak and 100% malolactic conversion.

Tasting Notes

Lemon sherbert, nectarine and custard apple on the nose with toasty oak precede a palate of stone fruit and honey dew melon with a succulent mouth feel full of bright fresh flavours finishing with a burst of grapefruit that adds line and length.

2016 Leaf Series Pinot Noir

Vintage

Pemberton’s winter and spring rainfall was below average, then 200mm fell on January 19. The temperatures, too, fluctuated wildly: Pemberton’s 2016 maximums varied from 18°C to 37°C. Overnight temperatures were cold, which helped acid retention. Despite the January rain event, the vines recovered quickly with strong, drying, Easterly winds and yields were hardly effected and high quality Pinot Noir fruit was retained.

Winemaking

Select parcels of Pinot Noir from Pemberton's Channybearup Road vineyards were hand picked and brought to the winery for bunch selection across our sorting table. The ferment contained 30% whole bunches and the rest de-stemmed but not crushed to employ carbonic maceration. The grapes were cold soaked prior to fermentation to gently extract colour and primary flavour. Gentle pressing and 6 months barrel maturation in a selection of new and used French oak.

Tasting Comments

A wine expressive of its region fills the glass with aromas such as cherry and berry red fruits. The palate is pure with soft tannins. Fine French oak provides subtle cedar and spice.

This wine has delicate aromas and flavours which make it an ideal accompaniment to game dishes such as duck or rabbit and equally suited to try with soft ripe cheese.

Cabernet sauvignon and Malbec fruit were sourced from a Wilyabrup vineyard at the warmer, northern end of the Margaret River appellation. The harvested fruit was then sorted and crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. During this period each parcel of fruit was pumped over and hand plunged to extract colour, fine tannin and varietal complexity. The wine was then matured for 14 months in a range of French oak barriques before blending by barrel selection.

Tasting Notes

Blackcurrant, spice and ripe tannins from the Cabernet sauvignon coalesce perfectly with plush, juicy and robust structured Malbec. An elegant wine with fragrant red fruit, a structured palate with subtle oak, culminating in a finely textured finish.

2015 Lot 80 Cabernet Sauvignon

Vintage

The 2015 vintage was more challenging than the previous few vintages. Margaret River vineyards produced lower yields of Cabernet Sauvignon. Cool and unsettled conditions in late 2014 reduced flowering and fruit set. Conditions over the rest of the season were favourable for the development and ripening of high quality red fruit. A wet winter ensured rain fed soil moisture complimented irrigation. The late summer growing period was dry, sunny and warm without any extreme heat stress events.

The fruit was hand picked and sorted, and then crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. Tasting Notes

Crimson in colour; the wine exhibits a strong mix of red currants, blackcurrant jubes, bay and light cedar. The palate is silky and velveteen. Forest fruits front a polished palate with hints of chocolate, spice and soft fine tannins.

This wine matches exceptionally to sumac crusted lamb shoulder but works with most meat dishes and firm ripe cheeses.

2017 Eagle Bay Series Chardonnay

The Eagle Bay Chardonnay is produced from small, very select parcels of Margaret River fruit chosen to be the Best of the Best and to showcase true chardonnay varietal and regional wine qualities. Due to our strict fruit quality criteria, production of Eagle Bay Series Chardonnay is extremely limited to only a few hundred dozen. Each bottle is individually numbered to ensure its uniqueness.

Vintage

Margaret River had abundant winter and spring rainfall, but little or no rain from November until mid-March, with significant rainfall over three days. More relevantly, it was the worst year for birds on record due to a combination of bushfires and no marri blossom. Yields were very low due to poor flowering and fruitset; chardonnay and cabernet sauvignon were standouts.

Wine Making

The makeup of this Margaret River Chardonnay is of the Dijon clone 96, which has been of high fruit quality in this region. The fruit was hand picked and whole bunch pressed which allowed the winemakers to make minimal additions during the first stages of the production process. The juice was transferred to a selection of new and one year old French oak Barriques for a slow cool fermentation with wild yeasts.

Tasting

Strong lemon rind and squeezed pith are at the height of the aromatic profile. Beyond this strikes light toasted bread and nuts, vanilla custard, spice and hints of cracked seashells. The palate is full and coating but balanced with a long acidity. Subtle stone fruit is complemented by a light char on the finish, while some yeasty notes help complete this complex wine.

Winemaking

This small batched single vineyard wine is sourced from the Maschmedt vineyard on the Eastern side of the Wilyabrup sub-region.  The selected fruit went to an open top fermenter for a long, gentle maceration on skins and then underwent 9 months maturation in a combination of new (50%) and 1 year old French oak barriques.

Tasting Notes

Bright ruby red in colour, with a black/purple interior, this wine has a vibrant, perfumed nose of red cherry and blueberry, with hints of spice and white pepper.  The new oak provides complexing notes of char, delicatessen meats and vanillin that will continue to develop with time.  This is a medium weight wine made in the classic WA cool climate style.

The 2013 vintage was marked by a near perfect growing season with very little unseasonable rainfall, good ripening conditions and therefore well balanced fruit. The red wines from this vintage show great depth of flavour and this cabernet sauvignon stood out in particular.

Tasting Notes

An abundance of blackcurrant and cassis on the nose plus underlying hints of classic Margaret River bay leaf.  Great fruit depth and maturation in 50% new fine grained French oak provides beautiful fine and long tannins.  Cigar box and dark chocolate oak spice add complexity to this powerful cabernet sauvignon.

2014 Botrytis Riesling

In 2014 we experienced a near perfect growing season with a cool, steady start with uninterrupted flowering and fruit set. A steady warn summer made for excellent ripening conditions without excessive heat.

Winemaking

Riesling grapes sourced from Frankland River became raisined and partially Botrytised, allowing our winemakers a unique opportunity to produce this fine, concentrated wine with high residual sugar.

Tasting Comments

Aromas of dried fruit, orange and lemon rind, precede an intense, sweet palate, that is richly textured and balanced with flavours of fig, molasses and treacle with a long lingering finish.

We will carefully pack and deliver promptly to your door or PO Box. Best of all delivery is FREE.

Wines are dispatched using Australia Post and typical delivery times are between three (WA) and ten working days (Eastern States).

The minimum order is 12 bottles and there after in multiples of 12 bottles.
