Wise Estate founding owner Ron Wise accidentally left his Cellar keys here, so we’ve picked out his favourite Cabernets for you to try.

This Saturday is International Cabernet Day, but we thought Cabernet is more deserving, so instead, until Father’s Day we are celebrating International Cabernet Week.

Margaret River Cabernet sauvignon is renown as being some of the finest in the world and this week we are celebrating the joy of Cabernet by opening up four of our museum wines from the personal cellar of RonWise.

Come into the Tasting Room and Distillery this week only and sample the Eagle Bay Series Cabernet sauvignon from the 2009, 2010, 2011 and 2012 vintages. All are from very successful vintages. These wines are seriously delicious. Just ask our Customer Experience Manager, Denys 🍷

2020 Sea Urchin Sauvignon Blanc Semillon

vintage

Excellent conditions for the slow ripening of perfectly balanced  Sauvignon Blanc and Semillon. The fruit showed an ideal sugar to tartaric and malic acid ratio which expressed a fuller spectrum of fruit flavours.

winemaking

Sauvignon Blanc and Semillon was harvested and pressed in the cool of night to retain freshness and to keep each parcel sound for settling and fermentation. Inoculation was performed in stainless steel tank by a selected yeast strain while keeping each variety separate until blending. Post fermentation each tank was left for up to one month on yeast lees to add complexity and weight to the palate.

tasting comments

A bright crisp and delicately textured wine. Pale straw with a green tint. Classic Sauvignon Blanc flavours of passion-fruit, lychee and guava meld seamlessly with Semillon characters of fresh straw and lemon. The resultant wine is in the true classic Margaret River style -crisp, mouth-watering and refreshing.

This classic West Australian blend is a fruit driven, thirst quenching and refreshing drink. Easily enjoyed on its own, as an aperitif or as an accompaniment to fresh seafood and Asian cuisine.

2020 Sea Urchin Chardonnay

The fruit was machine harvested at night and pressed in the cool early morning to retain freshness and varietal character. Cool fermentation occurred in stainless steel tanks.

tasting comments

Aromas of white peach and fresh lime precede a palate of ripe stone fruits. This wine has a succulent mouth-feel of bright, fresh flavours with grapefruit and lemon zest creating a well balanced finish.

Compatible with poultry, white meat and most seafood dishes, the generous fruit weight also makes this wine capable of standing up to robust, spicy flavours.

Saignee "Provincial" Style Rose.

Tasting

Pale salmon pink. The nose shows roses, lychee, strawberry, spice, candy, pink lady (red apples), toffee apple, red currant, fairy floss. The palate is juicy, creamy and luscious with a textural, crunchy acidity. Strawberry, watermelon and red fruits.

2019 Sea Urchin Shiraz

Winemaking

A short cold maceration to extract the abundant fruit and spice preceded fermentation, malolactic conversion and maturation in French oak.

Tasting Notes

A deep purple with hues of red with an array of mulberries and spice on the nose. The palate is soft and mouth filling with texture, flavour and natural acidity in perfect balance.

Food Matching

The pure, fruity quality of this wine, balanced by its savoury finish makes it the perfect match for poultry and meat dishes cooked in a sauce, rich tomato based dishes, especially pasta, grilled red meats and excellent too with pizza.

2019 Sea Urchin Cabernet Merlot

Vintage

The 2019 vintage will rank very highly in the history of Margaret River viticulture. Growing conditions were cool from budburst right through until ripening which ensured vines remained unstressed. Occasional light rain events during ripening did not result in any disease problems or losses. The summer was mild without any extreme heat events meaning that conditions were ideal for producing high quality red wines in the locality of our Cabernet growing partners, the Wilyabrub sub-region.

Winemaking

These varieties were picked, fermented in stainless steel vats and left on skins to build tannin structure and complexity. After gentle pressing each parcel was matured with oak separately until final blending.

Tasting Notes

Medium-deep red with red-purple hue. Dense aromas of succulent red berries, cherries and chocolate with a hint of cassis. A silky rich palate of great length and tapered finish. The fine tannin structure enhanced by maturation in fine French oak. A perfect drink now red wine or age to develop it into a smooth velvety mouthfull of flavour.

Food Matching

This is a beautiful  example of Margaret River red wine - great with or without food. It's a guaranteed to be a barbeque stopper, alternatively pair with the weekly lamb roast or it will be sensational with slow cooked beef brisket.

Sea Urchin Sparkling Brut

Vintage

This wine is made with select fruit from more than one vintage, allowing for a wine that is consistent in style and taste with every production cycle, as has been the way in Champagne for hundreds of years.

Winemaking

The Sea Urchin Sparkling Brut is made from select vineyards of Chardonnay grapes. The grapes were harvested and pressed on a gentle cycle to minimise phenolics and then fermented to produce the best possible base wine. The base wine was kept on yeast lees for a number of months to add complexity while maintaining freshness. Secondary fermentation took place in pressurized tanks (this is known as the Charmat method) and then bottled under pressure, trapping the carbon dioxide in solution to capture a fine bead.

Tasting Notes

Sea Urchin Sparkling Brut is made to be an easy drinking sparkling wine. It displays clean lemon citrus fragrance along with lifted floral blossom, toffee almonds, Crème Brûlée and underlying hints of vanilla and rose water. On the palete the wine shows some honey toast and poached pears , which then showcases a creamy softness, more Crème Brûlée, quince and a long refreshing finish.

Try with fresh oysters, sugar cured salmon, soft cheeses, chicken salads.

NV Bead Sparkling Pinot Noir (ROSE)

This wine is made with select fruit from more than one vintage, allowing us to bottle a wine that is consistent in style and taste with every production cycle, as has been the way in Champagne for hundreds of years.

Winemaking

The base wine put on triage in a stainless steel vessel for freshness and once the second fermentation is complete, filtered and bottled immediately to retain its intense fruitiness and brightness.

Tasting Notes

This delicately coloured wine has an excellent, fine bead, with a persistent mousse that enlivens the palate. Aromas of strawberries and rose petals precede a palate rich in strawberries and cream characters with a crisp and refreshing finish.

Whilst enjoyable on its own try this wine canapés, light seafood dishes or smoked salmon.

2020 Leaf Series Sauvignon Blanc Fume Blanc

100% Sauvignon Blanc sourced from a single vineyard just South of Witchcliffe. Fermented in brand new French oak barriques and matured for 6 months.

Vintage

In 2020 the start of the season was cooler with a wet spring, giving the vines the strength to get through the long, dry and warm summer. Autumn was typical with warm days and cool nights, allowing the fruit to be picked early and in optimal condition to provide wines with aromatic profile and flavour.

Wine Making

The grapes were harvested in the early hours of the morning for immediate processing to maintain the freshness and aromatics of the fruit. Made in traditional Bordeaux style, fermentation was carried out in new French oak barriques to give the wine a depth of flavour, texture and complexity. After 3 months of maturation on yeast lees the wine was stabilized, fined and filtered for bottling.

Tasting Notes

This is a complex wine with bright lemon brulee and guava aromatics leading to textural palate, finishing with a delicate mineral acidity.

Food Matching

Can be enjoyed with or without food. However try this classy West Australian Sauvignon Blanc with Fish pie with asparagus and spring vegetables.

2020 Leaf Series Pinot Grigio

Visitors to the Wise Estate Tasting Room often ask us what it is the difference between Pinot grigio and Pinot gris. They are actually made form the same variety - which is a white mutation from the Pinot noir variety Grigio is Italian for 'grey', whereas gris means “grey” in French – referring to the lighter colour of the grape’s skin. Traditionally Pinot grigio is grown in cooler climates resulting in crisper, more savoury wines. Margaret River Pinot grigio tends to ripen quite early resulting in sweeter, more full bodied wine.

Pemberton had an excellent build up to harvest with dry weather conditions before some wet weather mid January. This increased disease pressure however a hot dry period followed allowing optimum picking conditions with high yields. White varieties in 2016 have been seen to have great length with crisp acidity.

winemaking

A small parcel of Pinot Grigio was machine harvested and transported to the winery in the cool of night to retain freshness of the fruit. It was then destemmed and pressed to stainless steel tank for cold settling of solids. The juice was then racked to a selection of seasoned French oak barriques for a slow cool fermentation. The wine was left in oak on yeast lees for 3 months to build palate weight and texture.

tasting comments

Aromas of pear, lime, spice and pastry complement a palate that is weighty and long with flavour. Subtle texture throughout the palate is lifted by a gentle refreshing acidity.

2019 Leaf Series Chardonnay

Vintage

2019 can be considered as a challenging and labour intensive year. Cooler than average temperatures during spring and summer, coupled with reduced solar exposure and an increase in afternoon humidity during ripening made canopy management critical to prevent disease and optimise sun exposure. A great year however for aromatic whites.

Winemaking

Select parcels of premium Chardonnay fruit is sourced from our partner growers in Wilyabrup - the heart of the Margaret River growing region. This fruit is then crushed fermented and aged in both new and used French oak barriques for a period of 12 months. After this time barrel selection takes place and the “reserve” chardonnay is assembled together before bottling.

Tasting Notes

Yet again the winery team have crafted an exceptional Chardonnay. The nose is intense with tropical and citrus fruits jumping from the glass. There is subtle hints of oak spice and toasty notes. The palate is lean and precise with plenty of fruit and well integrated oak compexity.

This wine can be enjoyed both with or without food. But for best results enjoy with soft cheeses, chicken or seafood.

2019 Leaf Series Shiraz

Winemaking

Machine picked fruit was brought into the winery and de-stemmed to a static fermenter for a cold soaking period to capture colour from the skins. The must was fermented up to temperatures of 25 degrees C and pumped over once a day to extract soft tannins from the skins and seeds. Post fermentation the must was pressed off to a selection of French oak barriques to complete malolactic fermentation and a maturation period.

Tasting Notes

Seductive layers of rich ripe fruits of the forest, exotic spice and oak complexity with silky tannins and a long satisfying finish.

Food Matching

This rustic, full-bodied wine is perfect to drink with a hearty winter meal.  It is structured to match a grilled rib-eye steak or roast leg of lamb.

2018 Leaf Series Cabernet Sauvignon

Vintage

2018 was yet another exceptional vintage in the Margaret River GI. Good rain in December followed by mild to warm temperatures allowed for steady and slow ripening. Result - high yields and exceptional fruit quality. Yet another near perfect vintage for the reason. The red wines are young but very good indeed. This could be the vintage remembered for years to come.017 vintage in Margaret River has proven to be exceptional in fact It was simply perfect; cool crisp mornings and evenings with beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the key Margaret River variety Cabernet Sauvignon.

Winemaking

Cabernet Sauvignon fruit was sourced from a Wilyabrup vineyard at the warmer, northern end of the Margaret River appellation. The harvested fruit was then sorted and crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. During this period each parcel of fruit was pumped over and hand plunged to extract colour, fine tannin and varietal complexity. The wine was then matured for 14 months in a range of French oak barriques before blending by barrel selection.

Tasting Notes

A great example of a classic Margaret River Cabernet displaying aromas of dark fruits and cassis, which lead to a powerful fruit palate, with the dark fruits taking pride of place along side the elegance of the oak, offering bay leaf like spice chocolate and coffee characters and a good acidity which will in turn allow this wine to develop into something very special.

Food Matching

This wine is perfect with your favorite cut of prime beef cooked to your liking. Roasted lamb. Any red meat dishes. Also enjoy with hard and mature cheeses.

Formerly known as Gin Gin Gin, this is our original Wise Gin. Junipers and botanicals - triple distil, this gin starts its life as a Gingin clone Margaret River Chardonnay. Juniper berries, lemon myrtle & citrus dominate the palate along with exotic spice the only addition is Margaret River rain water. Epic news just in from London: Wise Gingin Original Gin was one of only two West Aussie gins to receive a medal at the 2020 London Spirit Awards. This is HUGE! So we‘re proud to be making the best gin in Australia's South West and one of the two best gins in Western Australia  according to the judges in London. We’ll raise a glass to that!

Pink Gin

Our Gin Gin Gin with the addition of Rose wine made with Shiraz grown here on the Wise property. The Gin Gin Gin characters with a hint of summer fruits.

Kick things off with a Strawberry Gin Mojio

Whether your coupled up or flying solo, you will love this Valentines inspired cocktail. To a shaker, add 1/2 cup crushed ice, 3 to 4 strawberries, and 5 mint leaves. Muddle this to release the juice and flavors. Next, add 40 - 60 ml of Wise Pink gin, fresh lemon juice, usually, that’s about half a lemon, and simple syrup. Shake this all together and pour over ice in a tumbler. This mixture will not fill the glass, finish filling the glass with tonic water and stir to combine. Garnish with more strawberry and mint.

Ginger Gin

Strictly speaking not a gin but a Pisco that has been flavoured $75.00 with a unique recipe of sugar syrup, ginger, ginseng & guarana.

Pisco

A pure spirit single distil from wine made here in the winery. It has a subtle wine flavour on the back palate and is dilluted with Margaret River rain water. Used in South America as a base for many drinks including the famous Pisco Sour. Wise pisco is a clear spirit, softly aromatic with floral and citrus notes. It is 40% alcohol by volume with a light mouthfeel and subtle wine flavours on the back-palate.

Where does Pisco get its name?

Traditional Pisco is made in the Pisco region of central south-west Peru and is claimed to be the Peruvian national drink, although neighbouring Chili also claims ownership of this grape wine distill. Whatever its providence we find our own version of Pisco a very interesting and tasty beverage.

How to make a Pisco Sour

Ingredients

  • 60 ml Wise Pisco
  • 30 ml Freshly squeezed lime or lemon juice
  • 15 ml Simple syrup
  • 1 Egg white
  • Garnish: Angostura bitters

Method

  1. Combine Wise Pisco, sugar syrup, egg white and juice with ice in a shaker and shake vigorously. The acidity of the juice emulsifies the egg white.
  2. Strain into a chilled glass over fresh ice.
  3. Strain and pour into a low ball glass with wedge of lemon or lime.Garnish with 2-3 drops of bitters.
Kick back and let the sun shine.

Organic Gin

The Wise Distillery is the only Margaret River distiller of Organic Gin distilled from our own chardonnay and other grape varieties on-site as the base for our spirits. This is done to retain the fruit aromatics of the wine to infuse into our range of spirits. Our dream is to make great, small run gins and spirits to share with you and that we love too. Join us on our journey as we discover the delights of small run dry gin distilling.

Our first Certified Margaret River Organic Gin

The process starts with carefully selected parcels of certified organic Gingin clone Chardonnay grown on certified organic Margaret River vineyards. The grapes are fermented and the wine base is then made at an organically certified Wise winery. The resultant organic wine is distilled giving a base alcohol. This base spirit is then triple distilled with certified organic botanicals being added for the final distil. This process is time consuming and requires great attention to detail, but it is all made worthwhile when you taste the final product. The exclusion of all chemical preservatives and additives leaves a crystal clear and stunning dry gin. The Wise Organic Gin has a smooth alcohol and is very much in the classic London Dry Gin style. The inspiration for a gin mde to organic principles came from customer feedback saying they were unhappy with the quality of mass-produced commercial gins. Tasters of Wise gins raved about the clean, natural aroma and flavour of gin distilled from organically grown Gingin clone chardonnay grapes and pristine Eagle Bay rain water. The Wise gins were essentially organic gins but without the certification. This customer feedback  encourages us to set about the process of gaining organic certification of the distillery and the range of gins through Southern Cross Certified.

Organic Botanicals

One of the secrets to a great Gin is in the botanicals used to flavour it. The natural oils and aromatic compounds are absorbed and infused as the botanicals are steeped and travel through the condensing coil as part of the vapour. We use 100% certified organic botanicals in our gin. These are chosen from a very few select suppliers who can meet organic certification requirements and who supply the finest botanicals. A blend of Juniper, Coriander Seeds, Cardamom Pods, Angelica Root and Lemon Myrtle were used to flavour this gin.

Tasting Notes

Nose – Junipers, fresh pine needles, dried bay leaf, bath salts. Palate – Full and smooth, dry Juniper backbone which is followed by a broad and sweet spice on the mid palate. It has an underlying fruitiness and is subtly spiced with pepper, The finish is long smooth dry and with a touch of exotic spice, pepper and lemon. Wise Organic Gin – 700ml – 40% ABV For the cleanest, most natural way to enjoy your Organic Gin – pour over ice. Alternatively, mix with Fever Tree Naturally Light Tonic Water and a twist of lemon or lime if you must. Or see below for our Gin Cocktail idea.

Greg's Gin & Tonic

Straight from Wise Distiller Greg Garnish. A classic G&T made with our Organic Gin to savour and enjoy at any time. According to Greg, the 'golden rule' for a great G&T is that you must add more gin than tonic water.
Ingredients
  • 60-75 ml Wise Margaret River Organic Gin
  • 60 ml Fever Tree Naturally Light Tonic Water
  • 2 slices of lemon or lime
Method
Chill your 200ml glasses, add ice, then one slice of lemon or lime, then your Organic Gin, then your tonic water and finally the second slice of lemon or lime. And that it, you instantly made the world a happier place.

Tom Collins

A great summer cool drink with the perfect ratio of sweet, sour and acloholic strength.
Ingredients
  • 60 ml Wise Organic Gin
  • 35 ml fresh lemon juice
  • 20 ml sugar syrup
  • Soda wate to serve
  • Garnish with lemon slice
Method
Add organic gin, lemon juice and sugar syrup to a shaker half-filled with ice. Stir to combine, strain into a tall glass with fresh ice cubes, top with soda, garnish with lemon slices and serve.

We triple distil our gin base and then flavour the spirit with a syrup and mandarins. This is a liqueur similar to the famous triple sec liquer made in France. Drink neat over ice or use in cocktail.
