2020 Sea Urchin Sauvignon Blanc Semillon

vintage

Excellent conditions for the slow ripening of perfectly balanced  Sauvignon Blanc and Semillon. The fruit showed an ideal sugar to tartaric and malic acid ratio which expressed a fuller spectrum of fruit flavours.

winemaking

Sauvignon Blanc and Semillon was harvested and pressed in the cool of night to retain freshness and to keep each parcel sound for settling and fermentation. Inoculation was performed in stainless steel tank by a selected yeast strain while keeping each variety separate until blending. Post fermentation each tank was left for up to one month on yeast lees to add complexity and weight to the palate.

tasting comments

A bright crisp and delicately textured wine. Pale straw with a green tint. Classic Sauvignon Blanc flavours of passion-fruit, lychee and guava meld seamlessly with Semillon characters of fresh straw and lemon. The resultant wine is in the true classic Margaret River style -crisp, mouth-watering and refreshing.

2019 Sea Urchin Chardonnay

vintage

2019 can be considered as a challenging and labour intensive year. Cooler than average temperatures during spring and summer, coupled with reduced solar exposure and an increase in afternoon humidity during ripening made canopy management critical to prevent disease and optimise sun exposure. A great year however for aromatic whites.

winemaking

The fruit was machine harvested at night and pressed in the cool early morning to retain freshness and varietal character. Cool fermentation occurred in stainless steel tanks.

tasting comments

Aromas of white peach and fresh lime precede a palate of ripe stone fruits. This wine has a succulent mouth-feel of bright, fresh flavours with grapefruit and lemon zest creating a well balanced finish.

Compatible with poultry, white meat and most seafood dishes, the generous fruit weight also makes this wine capable of standing up to robust, spicy flavours.

2019 Sea Urchin Shiraz Rose

vintage

Excellent flowering and fruit set followed ensuring good yields. The cool summer weather enabled steady ripening and allowed fruit from the Wise Estate shiraz vineyard (‘Mazza’s Block’) varieties to ripen with a balance of sugars and natural acids that suited perfectly the vinting of a Rose style wine.

winemaking

The Shiraz fruit was hand-picked on 3 April 2018. The grapes were destemmed and left for a short period in the press to gain texture and colour. Post pressing the juice was chilled and settled before a cool fermentation to retain aromatic intensity then left on yeast lees for 6 months to add complexity before filtration and bottling.

tasting comments

A perfect Spring afternoon drink with eye-catching iridescent pink colour. The nose shows roses, lychee, strawberry, spice, candy, pink lady (red apples), toffee apple, red currant, fairy floss. The palate is juicy, creamy and luscious with a textural, crunchy acidity. Again strawberry, watermelon and red fruits.

food matching

Great picnic or barbeque wine with grilled chicken, Also matches well to light, spicy Asian cuisine. For something a little different, try the Rose with a dessert of ripe peaches.

Winemaking

A short cold maceration to extract the abundant fruit and spice preceded fermentation, malolactic conversion and maturation in French oak.

Tasting Notes

A deep purple with hues of red with an array of mulberries and spice on the nose. The palate is soft and mouth filling with texture, flavour and natural acidity in perfect balance.

Food Matching

The pure, fruity quality of this wine, balanced by its savoury finish makes it the perfect match for poultry and meat dishes cooked in a sauce, rich tomato based dishes, especially pasta, grilled red meats and excellent too with pizza.

2018 Sea Urchin Cabernet Merlot

Vintage

Both the Great Southern and Margaret River regions experienced a very unusual amount of rain and very cool weather during the middle and latter part of March 2017.  This occurrence set up optimal conditions for later Autumn, producing warm and sunny days with cool crisp mornings and evenings.  As Autumn 2017 was not too hot, perfect ripening conditions were ensured across both the regions thus producing an elegant and flavoursome Cabernet Sauvignon.

Winemaking

These varieties were picked, fermented in stainless steel vats and left on skins to build tannin structure and complexity. After gentle pressing each parcel was matured with oak separately until final blending.

Tasting Notes

Grape bubble gum aromas with a hint of dried herb. This full bodied wine has a strong balanced structure of fruit, acid and tannin. A perfect wine to drink now with a juicy steak or age to develop it into a smooth velvety mouthfull of flavour.

2017 Leaf Series Verdejo

Verdejo is a rarely seen Spanish variety in WA. Aromas of fresh citrus and light floral notes. The palate shows a fleshy softness with abundant fruit flavours and a light refreshing finish.

vintage

2017 vintage started late, two to three weeks later than the preceding couple of years. Early ripening varieties such as Chardonnay were harvested at the end of February through the first half of March. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. This can be quite beneficial as cool ripening conditions helps maintain the fresh, bright aromas of white varieties and reduced alcohol levels.

winemaking

The Verdejo grapes were machine harvested in the cool of night to retain freshness and to avoid oxidation. The grapes were placed through a destemmer to remove unwanted stalks before being chilled down to the bag press. The next stage involved gentle pressing to a stainless steel tank for cold settling of solids. The clear juice then racked to another tank for fermentation. Fermentation was maintained at temperatures sub 15 degrees C.

Pale straw in colour. Aromas of fresh citrus and light floral notes. The palate shows a fleshy softness with abundant fruit flavours and a light refreshing finish.

2019 Leaf Series Semillon Sauvignon Blanc

Vintage

In 2019 the start of the season was cooler with a wet spring, giving the vines the strength to get through the long, dry and warm summer. Autumn was typical with warm days and cool nights, allowing the fruit to be picked early and in optimal condition to provide wines with aromatic profile and flavour.

Wine Making

The grapes were harvested in the cool of the night to maintain the freshness and aromatics of the fruit.

Tasting Notes

Lifted aromas of passionfruit, guava and meadow cut hay lead to a clean palate of ripe citrus.

Food Matching

Can be enjoyed with or without food. However try this classy West Australian Sauvignon Blanc with Fish pie with asparagus and spring vegetables.

Cellaring

Drink now, but further cellaring up to 4 years will develop greater complexity to this wine.

2019 Leaf Series Chardonnay

Vintage

Winemaking

Select parcels of premium Chardonnay fruit is sourced from our partner growers in Wilyabrup - the heart of the Margaret River growing region. This fruit is then crushed fermented and aged in both new and used French oak barriques for a period of 12 months. After this time barrel selection takes place and the “reserve” chardonnay is assembled together before bottling.

Tasting Notes

Yet again the winery team have crafted an exceptional Chardonnay. The nose is intense with tropical and citrus fruits jumping from the glass. There is subtle hints of oak spice and toasty notes. The palate is lean and precise with plenty of fruit and well integrated oak compexity.

Food Matching

This wine can be enjoyed both with or without food. But for best results enjoy with soft cheeses, chicken or seafood.

2018 Leaf Series Pinot Noir

Vintage

Pemberton’s winter and spring rainfall was below average, then 200mm fell on January 19. The temperatures, too, fluctuated wildly: Pemberton’s 2018 maximums varied from 18°C to 37°C. Overnight temperatures were cold, which helped acid retention. Despite the January rain event, the vines recovered quickly with strong, drying, Easterly winds and yields were hardly effected and high quality Pinot Noir fruit was retained.

Winemaking

Select parcels of Pinot Noir from Pemberton's Channybearup Road vineyards were hand picked and brought to the winery for bunch selection across our sorting table. The ferment contained 30% whole bunches and the rest de-stemmed but not crushed to employ carbonic maceration. The grapes were cold soaked prior to fermentation to gently extract colour and primary flavour. Gentle pressing and 6 months barrel maturation in a selection of new and used French oak.

Tasting Comments

A wine expressive of its region fills the glass with aromas such as cherry and berry red fruits. The palate is pure with soft tannins. Fine French oak provides subtle cedar and spice.

Food Matching

This wine has delicate aromas and flavours which make it an ideal accompaniment to game dishes such as duck or rabbit and equally suited to try with soft ripe cheese.

2017 vintage in Margaret River has proven to be exceptional in fact It was simply perfect; cool crisp mornings and evenings with beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the key Margaret River variety Cabernet Sauvignon. The 2017 vintage may well prove to be a classic Margaret River Cabernet Sauvignon year, a year like 1994 with great flavours and mature tannin at lower alcohol levels.

Winemaking

Select parcels of the best fruit was sourced from our Wilyabrup vineyard at the warmer, northern end of the Margaret River appellation. The harvested fruit was then sorted and crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. During this period each parcel of fruit was pumped over and hand plunged to extract colour, fine tannin and varietal complexity. The wine was then matured for 14 months in a range of French oak barriques before blending by barrel selection.

Tasting Notes

This classic “bordeaux” blend offers an intense wine that nonetheless treads lightly. With fragrant red fruits, a juicy robust palate of blackcurrant and spice. Well integrated oak offers additional levels of complexity to this very well crafted and suductive wine. The finish is long and satisfying leaving you wanting more.

Food Matching

This wine is perfect with roasted meats. It has also been served with duck in the Wise Winery Restaurant with great acclaim.

2018 was yet another exceptional vintage in the Margaret River GI. Good rain in December followed by mild to warm temperatures allowed for steady and slow ripening. Result - high yields and exceptional fruit quality. Yet another near perfect vintage for the reason. The red wines are young but very good indeed. This wine is perfect with your favorite cut of prime beef cooked to your liking. Roasted lamb. Any red meat dishes. Also enjoy with hard and mature cheeses.

This wine matches exceptionally to sumac crusted lamb shoulder but works with most meat dishes and firm ripe cheeses.

Select parcels of Swan Valley wines are aged in hogsheads to develop a rich tawny colour through oxidization make up this blend with an average age of 10 years.

This fortified wine is rich and delicious . The wine shows delicious aromas of decadent stewed fruits, apricots, honey and nuts.

Pisco

A pure spirit single distil from wine made here in the winery. It has a subtle wine flavour on the back palate and is dilluted with Margaret River rain water. Used in South America as a base for many drinks including the famous Pisco Sour.

Pisco that has had lemon and lime sugar spirit added. This can be used to made a Pisco sour just add an egg white and shake over ice.

Organic Gin

About

This gin starts in the vineyards of Margaret River where carefully selected parcels of certified organic Chardonnay is picked and fermented at the Wise Wine Winery and Distillery in Eagle Bay. The resultant organic wine is distilled giving a base alcohol. This base spirit is then triple distilled with certified organic botanicals being added for the final distil. This gin has a smooth alcohol and is in the classic London Dry style.

Juniper, Coriander Seeds, Cardamom Pods, Angelica Root, Lemon Myrtle.

Tasting Notes

Nose - Junipers, fresh pine needles, dried bay leaf, bath salts.   Palate - Full and smooth, dry Juniper backbone which is followed by a broad and sweet spice on the mid palate. It has an underlying fruitiness and is subtly spiced with pepper, The finish is long smooth dry and with a touch of exotic spice, pepper and lemon.   Serve - Gin and Tonic, Negroni, Martini   Garnish -Fresh lime wedge, lemon slice, pink grapefruit   Tonic - Fever Tree naturally light   Wise Organic Gin - 700ml - 40% ABV
