2013 The Bead Méthode Traditionelle
The Chardonnay and Pinot Noir grapes that were used to make this wine were carefully selected from a Pemberton vineyard in 2013.
After crushing and fermenting, the 2 varieties were blended 50/50 before the wine received a secondary ferment under crown seal in bottle. The wine has been carefully aged on lees for four years to enable autolysis of the yeast to impart complexity on the wine. Earlier this year, the wine was disgorged, carefully dosaged and sealed under cork.
Aromas of ripe stone fruit, nougat and brioche are expressed on the nose while the palate displays a blend of peach, melon and apricot that merges with savory mushroom and stock characters.
Fresh oysters, smoked salmon, soft cheeses.
