2014 Leaf Series Cabernet Sauvignon
Excellent rainfall in 2013 set up the 2014 growing season by providing sub soil moisture. Disease pressure was low in what seemed to be yet another near perfect vintage in the South West. Milder weather at the end of April to early may slowed ripening of the Cabernet grapes, which retained varietal flavor and structure at harvest.
The fruit was hand picked and sorted, and then crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. During this period each parcel of fruit was pumped over and hand plunged to extract colour, fine tannin and varietal complexity. The wine was then matured for 14 months in a range of French oak barriques before blending by barrel selection.
A great example of classic Margaret River Cabernet displaying aromas of dark fruits, moss, bay leaf and cassis.
The palate is elegant and made up of long fine tannin, subtle oak and black olive with an underlying choc mint character.
This wine matches well to beef rib roast with beetroot and horseradish but will accompany most red meat dishes.
