2020 Leaf Series Sauvignon Blanc
In 2020 the start of the season was cooler with a wet spring, giving the vines the strength to get through the long, dry and warm summer. Autumn was typical with warm days and cool nights, allowing the fruit to be picked early and in optimal condition to provide wines with aromatic profile and flavour.
The grapes were harvested in the early hours of the morning for immediate processing to maintain the freshness and aromatics of the fruit. Made in traditional Bordeaux style, fermentation was carried out in new French oak barriques to give the wine a depth of flavour, texture and complexity. After 3 months of maturation on yeast lees the wine was stabilized, fined and filtered for bottling.
This is a complex wine with bright lemon brulee and guava aromatics leading to textural palate, finishing with a delicate mineral acidity.
Can be enjoyed with or without food. However try this classy West Australian Sauvignon Blanc with Fish pie with asparagus and spring vegetables.
Drink now, but further cellaring up to 4 years will develop greater complexity to this wine.
