2016 Lot 80 Cabernet Sauvignon
The 2016 vintage was more challenging than the previous few vintages. Margaret River vineyards produced lower yields of Cabernet Sauvignon. Cool and unsettled conditions in late 2015 reduced flowering and fruit set.
Conditions over the rest of the season were favourable for the development and ripening of high quality red fruit. A wet winter ensured rain fed soil moisture complimented irrigation. The late summer growing period was dry, sunny and warm without any extreme heat stress events.
The fruit was hand picked and sorted, and then crushed into open vats for a cool, extended ferment, which lasted up to 3 weeks. During this period each parcel of fruit was pumped over and hand plunged to extract colour, fine tannin and varietal complexity. The wine was then matured for 14 months in a range of French oak barriques before blending by barrel selection.
Crimson in colour; the wine exhibits a strong mix of red currants, blackcurrant jubes, bay and light cedar.
The palate is silky and velveteen. Forest fruits front a polished palate with hints of chocolate, spice and soft fine tannins.
This wine matches exceptionally to sumac crusted lamb shoulder but works with most meat dishes and firm ripe cheeses.
