Growing conditions in the Riverland throughout the season remained temperate and mild. Good weather during spring ensured the vines set a good crop of grapes. The harvest commenced in February and proceeded unabated in almost perfect mild and dry conditions.
his wine is made from select vineyards of Prosecco grapes in the Riverland . All aspects of the winemaking are focused on maintaining a refreshing, aperitif style sparkling wine. The grapes were harvested and pressed on a gentle cycle to minimise phenolics and then fermented to produce the best possible base wine. The base wine was kept on yeast lees for a number of
months to maintain freshness before secondary fermentation in tank. Bottling occurs promptly to capture the bubble and fine flavour straight to glass.
Pale straw colour with faint green tints. The nose shows delicate aromas of garden herbs, cut apple, green melon and overlaid with hints of spearmint. The palate is light and fresh with flavours of green tropical fruit, honeycomb and granny smith apple. A subtle mid palate sweetness is balanced by a peppery, chalky acidity, a tang of tonic water like texture, with a
savoury finish which leaves the palate refreshed.
